Ingredients

  • 200 g wheat flour
  • 50 g buckwheat flour
  • 20 g dry yeast
  • 0.13 l milk
  • 1 egg
  • Salt
  • clarified butter (for frying)
  • 150 g Smoked salmon
  • 100 g Sour cream
  • 50 g cream cheese
  • black pepper (ground)
  • Salt
  • dill
  • Basil
  • olives
  • red pepper flakes

Instructions

    Combine the flours in a bowl and sprinkle the dry yeast over them.

    Add the milk, egg, and salt, then knead quickly. Cover the dough and let it rise in a warm place for about 1 hour.

    Set the oven to 100°C (top and bottom heat) to keep warm.

    Heat some clarified butter in a pan. Drop a tablespoon of dough into the pan and cook small pancakes until golden brown on both sides. Keep them warm in the oven.

    Whisk the sour cream with the cream cheese until smooth, seasoning with salt and pepper.

    Spread the cheese mixture over the finished blinis and place a slice of salmon on each one.

    Garnish the blinis with herbs, olives, and red pepper flakes.
