Rösti with Goat Cream Cheese

- 1 kg cooked potatoes (from the day before)
- Salt
- Pepper (freshly ground)
- 3 tbsp chives
- 1 egg
- 2 tbsp milk
- 4 tbsp clarified butter
- 100 ml heavy cream
- 200 g goat cream cheese
- 2 tbsp chives
- a splash of lemon juice

Peel and grate the potatoes coarsely, season with salt and pepper, and mix in the chives. Whisk the egg with the milk thoroughly. Heat the clarified butter in two lightly greased pans, spread the potato mixture into each pan, shape into flat cakes with a spatula, drizzle with the egg‑milk mixture, cover, and cook over very low heat for about 20 minutes until crisp. Carefully flip using a lid or plate and briefly cook on the other side at slightly higher heat to crisp.

Whip the cream until stiff peaks form, stir in the goat cheese with chives, fold in the whipped cream, season with salt, pepper, and a splash of lemon juice. Spoon into small bowls and serve alongside the sliced potato cakes.
