Roasted Turkey Breast with Cabbage

Ingredients

  • 1 kg turkey breast fillet (rolled by butcher)
  • Salt
  • pepper (ground)
  • 4 tbsp olive oil
  • 4 oranges
  • 4 tbsp Honey
  • 1 small pointed cabbage
  • 1 onion
  • 1 tbsp butter
  • 1 tbsp powdered sugar
  • 100 ml Vegetable broth
  • 4 tbsp orange jam
  • basil (for garnish)

Instructions

    Preheat the oven to 200°C (Oven + Fan).

    Wash the meat, pat dry, lightly salt and pepper.

  3. 3.

    Sear in a roasting tin with oil until browned on all sides. Transfer to oven and cook for about 15 minutes.

    Peel two oranges and cut into slices; juice the remaining two. Mix half of the juice with honey, salt, and pepper.

    Brush the turkey breast with the orange-honey mixture, reduce heat to 180°C, and roast for another 20-25 minutes.

    Meanwhile, wash the cabbage, remove the core, slice leaves into ~1 cm strips. Dice onion finely, sauté in butter until translucent, sprinkle powdered sugar, caramelize slightly, then add remaining orange juice. Reduce, pour in broth, steam for 5-10 minutes. Mix in orange slices, season with salt and pepper, warm jam.

    Remove turkey from oven, cut off trussing string, slice the roast and serve atop the cabbage mixture. Drizzle some jam over the top and garnish with basil. Serve with potato croquettes.
