Turkey Schnitzel with Mango

Ingredients

  • 2 slices turkey schnitzel
  • 2 slices Parma ham
  • 1 Mango
  • 100 g sprouts
  • 4 tbsp light soy sauce
  • 0.5 bundle sage leaves
  • Salt
  • Pepper
  • 2 tbsp butter
  • 1 tbsp honey

Instructions

    Peel the mango, remove the pit and cut the flesh into thin strips.

    Season the turkey schnitzel with salt and pepper on both sides and sear for 2 minutes in 1 tbsp hot butter. Remove and cover with foil to keep warm.

    In the same pan add 1 tbsp honey and caramelize the mango strips. Add the sprouts and deglaze with soy sauce. Plate on warmed dishes.

    With 1 tbsp butter, toast sage leaves until crisp, remove them, then briefly fry the ham so it can top the turkey schnitzel. Fold the schnitzel in half and serve over the mango sprout bed.
