Roasted Patisson Squash

This is how autumn tastes! Roasted patisson squash is rich in immune-boosting vitamins and is sure to be a hit.

Ingredients

  • 6 small patisson squashes (or 2 large yellow zucchinis)
  • 2 red onions
  • 2 tbsp butter
  • Salt
  • Pepper
  • 2 tbsp olive oil
  • basil (for garnish)

Instructions

    Preheat the oven to 200 °C.

    Cut a lid off each squash and remove the seeds. Slice the squashes crosswise into rings and arrange them side by side on a greased baking sheet. Whisk together olive oil, salt, and pepper to make a dressing, then brush it evenly over the squash rings.

    Bake the squash in the preheated oven for about 20 minutes until golden brown (they should still have a slight bite).

    Meanwhile, peel the onions and cut them into thin rings. Melt butter in a pan and quickly sauté the onion rings; they should stay pale and crisp.

    Remove the roasted patisson from the oven, arrange it with the onion rings on a plate, and garnish with basil leaves.
