Ingredients

  • 8 small Patisson pumpkins
  • 250 g cooked rice
  • 500 g Beef mince
  • 2 onions
  • 2 tbsp butter
  • 250 ml vegetable broth
  • 40 g grated Parmesan
  • 3 sprigs rosemary
  • Salt
  • Pepper

Instructions

    Cut a lid off the pumpkins and scoop out the flesh.

    Peel and finely chop the onions, mix with the ground meat and cooked rice, season with salt and pepper. Fill the pumpkin shells with the mixture, place in a shallow baking dish, cover with the lids, top with butter chunks. Pour broth over and bake at 180°C for 45 minutes. Before serving garnish with Parmesan and rosemary sprigs.
