Roasted Herring in Wine Broth

Ingredients
- 1 kg small green herrings (pre‑prepared for cooking)
- Salt
- Pepper
- 6 tbsp lemon juice
- 3 onions
- 0.25 l wine vinegar
- 120 g sugar
- 1 tbsp peppercorns
- 2 tbsp mustard seeds
- 1 tsp allspice berries
- 3 sprigs dill
- 3 bay leaves
- 2 tbsp flour
- 5 tbsp oil

Wash the herrings and pat them dry with paper towels. Season the inside and outside with salt and pepper. Drizzle with lemon juice and let marinate for 30 minutes. Meanwhile, peel the onions and cut into rings. In a pot bring 3/4 l water to a boil. Add the onions, vinegar, sugar, spice berries, bay leaves and 1 tsp salt; simmer vigorously for 5 minutes. Adjust the broth to be tangy and spicy.

Pat the herrings dry and dust lightly with flour. Heat oil in a large pan, fry the herrings on each side for about 6 minutes over gentle heat. Transfer them to a long bowl and pour the warm broth over them. Add dill and bay leaves. Cover and let the roasted herring steep for 2–3 days.
