Ingredients

  • 250 g green beans
  • Salad
  • 2 carrots
  • 60 g arugula
  • 1 handful sprouts (e.g., alfalfa, radish, leek)
  • 10 slices roast beef
  • 2 tbsp medium-hot mustard
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • Pepper

Instructions

    Wash and trim the beans, blanch in salted water for about 8 minutes. Shock in cold water and drain. Peel and finely grate the carrots. Wash, trim, and dry the arugula. Rinse the sprouts and let them drain well.

    Spread a little mustard on each roast beef slice. Layer with the prepared salad ingredients in the center. Whisk together oil and lemon juice, season with salt and pepper. Drizzle over the salad and roll up.
