Risotto with Sausage

Ingredients

  • 1 onion
  • 2 tbsp butter
  • 250 g Risotto rice
  • 200 ml dry white wine
  • 700 ml vegetable broth
  • 200 g salsiccia
  • olive oil
  • 65 g freshly grated Parmesan
  • Salt
  • pepper (ground)

Instructions

    Peel the onion, finely chop it and sauté half in a pot with 1 tbsp melted butter until translucent. Add the rice, stir briefly, then deglaze with wine. Stir until fully absorbed, then add enough broth to just cover everything. Continue adding broth in small amounts, stirring constantly, repeating this process until the rice is cooked and all broth is used.

    Meanwhile, peel the sausage and cut into pieces. In a hot pan, sauté the remaining onion cubes with 1 tbsp oil until translucent. Add the sausage, cook together, then mix everything with Parmesan and the remaining butter into the risotto. Season with salt and pepper, plate, and optionally sprinkle with extra Parmesan before serving.
