Ingredients

  • Zitronenschale (je 1 TL Abrieb)
  • Orangenschale (je 1 TL Abrieb)
  • 1 EL Zitronensaft
  • 500 g Ricotta
  • 4 Blätter weiße Gelatine
  • 2 Eigelbe
  • 2 EL Puderzucker
  • 3 EL flüssiger Honig
  • 400 g Himbeeren
  • 2 EL Puderzucker
  • 1 EL sherry
  • Minze (zum Garnieren)
  • 4 Herzformen

Instructions

    Gelatin in cold water soak.

    Beat egg yolks with powdered sugar until creamy. Add ricotta, orange and lemon zest, lemon juice, and 2 tbsp honey. Mix well. Dissolve gelatin in a small pot over low heat and stir into the ricotta mixture. Fill heart-shaped molds and chill for about 3 hours.

    Wash berries, discard stems (reserve some for garnish), mix with powdered sugar and sherry, bring to a boil, simmer a few minutes, then strain through a sieve and let cool.

    Serve by pouring the ricotta cream onto plates, arranging the raspberry sauce on top, and garnishing with mint leaves and fresh raspberries.
