Ingredients

  • 300 g long-grain rice
  • 600 ml Vegetable Broth
  • 3 tbsp olive oil
  • 1 bay leaf
  • 1 stick cinnamon
  • 1 tsp Ras el-Hanout
  • Salt
  • pepper (ground)
  • 4 onions
  • 4 tomatoes

Instructions

    Rinse the rice in a sieve and place it in a heatproof shallow dish such as a baking pan. Pour in the broth, drizzle with 1 tbsp oil, add the bay leaf and cinnamon stick, then season with ras el-hanout, salt and pepper. Seal the dish and cook on a hot grill under a closed lid over indirect heat for about 20 minutes.

    Meanwhile peel the onions and cut them into wedges. Wash the tomatoes, remove the stems, and slice them into wedges. Place the onions and tomatoes together on a grilling tray, season with salt and pepper, and drizzle with the remaining oil. After about 10 minutes, transfer the vegetables to the grill and cook over direct heat.

    Taste before serving, plate the rice and grilled vegetables in a tajine-style dish, and serve immediately.
