Ingredients

  • 1 untreated lemon
  • 400 g pumpkin flesh (e.g., muskmelon pumpkin) peeled and seeded
  • 200 ml apple cider vinegar
  • 200 ml clear apple juice
  • 2 red chili peppers
  • 6 cloves of mace
  • 2 star anise
  • 2 tbsp sugar
  • 1 tsp salt

    Peel the lemon rind and squeeze out the juice. Roughly cube the pumpkin, then combine with vinegar, apple juice, chilies, mace, star anise, sugar, and salt in a pot.

    Bring to a boil and simmer over low heat for about 10 minutes until firm yet tender. Transfer to prepared jars, seal immediately, and let cool. Allow to mature for at least 2 days before serving.
