Rice with Beans

Ingredients

  • 250 g beans (dried black or brown)
  • 500 g long grain rice
  • 2 green bell peppers
  • 3 onions
  • 6 Garlic cloves
  • 4 tbsp olive oil
  • 1 tsp cumin
  • 3 bay leaves
  • 2 tbsp white wine
  • 2 sprigs oregano
  • Salt

Instructions

    Soak the beans overnight, drain them the next day and cook in 1¼ l water for about 1½ hours until tender. Add rice, beans and ¾ l water to a pot. Halve the peppers, remove seeds, wash and dice. Peel onions and garlic, finely chop.

    Heat oil in a pan and sauté the vegetables with cumin, then add to the pot. Add bay leaf and wine, season with salt and simmer for about 20 minutes until the rice is cooked. Garnish with fresh oregano before serving.
