Rice skillet with green beans

Ingredients
- 150 g dried white beans
- 200 g wide green beans
- 250 g snail
- 500 g rabbit in pieces (with bones)
- 1 Garlic clove
- 1 ripe tomato
- olive oil
- 300 g Paella rice
- 1 can saffron (0.1 g)
- 1 l meat broth
- Salt
- pepper (from the mill)

Soak bean kernels overnight. Drain water and let them dry well.

Wash, trim, and cut green beans into pieces. Wash snails and rabbit, pat dry. Peel garlic and finely chop. Wash tomato and grate flesh finely. In 3-4 tbsp oil in a hot paella pan, brown the rabbit with snails for 5 minutes all around, then remove from pan. Add white and green beans with garlic to the pan, add 1-2 tbsp oil and sauté for 5 minutes. Then return the meat and snails, tomato, saffron and rice, mix well and pour in broth. Season with salt and pepper, then do not stir further.

Simmer about 20 minutes until the rice is cooked and a brown crust has formed on the pan bottom, reducing heat if necessary.
