Ingredients
- 250 g long grain rice
- Salt
- 1 onion
- 2 tbsp plant oil
- 1 tbsp curry powder
- 4 hard boiled eggs
- 250 g smoked flatfish (skinless, boneless)
- 2 tbsp freshly chopped parsley
- 3 tbsp heavy cream
- 1 tbsp Lemon Juice
- pepper (ground)

Cook the rice in double the amount of salted water for about 20 minutes.

While the rice cooks, peel and halve the onion, then slice into strips. In a hot pan with oil, brown the onions until golden. Add curry and sauté for about 1 minute. Peel the eggs and cut them into pieces. Flake the fish and mix it with the egg, parsley, and cream. If needed, drain the rice and add it to the mixture, stir well, let everything warm together for a few minutes, then season with lemon juice, salt, and pepper.
