Rice Salad South African Style

Ingredients

  • 250 g cooked rice
  • Salt
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 small onion
  • 50 g Raisins
  • Pepper
  • 100 g yogurt
  • 100 g mayonnaise
  • melissen leaves

Instructions

    Cook the rice in plenty of salted water until al dente, about 20 minutes. Wash and halve the bell peppers, remove seeds and membranes. Peel and dice the onion finely. Soak the raisins in warm water. Combine all ingredients except yogurt and mayonnaise in a bowl and mix well.

    Whisk the yogurt and mayonnaise together, season lightly with salt and pepper. Wash, dry, shake, tear the melissen leaves into small pieces and fold them into the salad. Finally pour over the salad, stir gently and serve.
