Apricot curry sauce for grilled fish and poultry, prepared to taste with either spicy or mild curry powder

Ingredients
- 200 g apricots
- 4 stalks coriander
- 150 g yogurt (1.5 % fat)
- 100 g salad cream
- 2 tsp Curry powder
- Salt
Instructions

Wash the apricots, pat dry, halve and pit them.

Coarsely chop half of the fruit and place in a tall bowl; dice the remaining flesh finely.

Wash the coriander, shake off excess water and pluck the leaves. Set aside some leaves, then roughly chop the rest with a large knife.

Add yogurt and salad cream to the coarsely chopped apricots and blend everything into a smooth puree with a stick blender.

Season with curry powder and salt. Fold in the diced apricots and chopped coriander. Garnish with the reserved coriander leaves and serve.
