Rice Pudding

Ingredients

  • 200 g milk rice
  • 500 ml milk
  • 3 tbsp sugar
  • 1 packet vanilla sugar
  • 3 tbsp Lemon juice
  • 2 tsp grated lemon zest
  • 3 tart apples (e.g., Boskop)
  • 0.5 tsp cinnamon

Instructions

    Bring the rice, milk, lemon zest, 2 tbsp sugar and vanilla sugar to a boil, then cover and simmer over low heat for about 35 minutes until it thickens.

    Peel two apples, quarter them, remove cores, and slice thinly. Mix with lemon juice, 1 tbsp sugar, and cinnamon; let sit.

    Layer rice alternately with apple slices in serving molds or a bowl, finishing with a layer of rice. Cool for 2–3 hours until set. To serve, pour the pudding out and arrange remaining apple strips on top.
