Ingredients

  • 250 g long grain rice
  • Pinch of salt
  • 5 tbsp raisins
  • 3 eggs
  • 3 tbsp whipping cream
  • 2 tbsp honey
  • juice and zest of ½ untreated oranges
  • fat for the pan
  • digestive biscuit crumbs
  • 4-6 pink grapefruits

Instructions

    Bring rice in 1/2 l water with salt to a boil, let it soak for about 20 minutes, then cool. Rinse raisins and rehydrate them in hot water.

    Separate eggs. Whisk yolks, cream, and honey until frothy. Add orange juice and zest. Drain raisins, fold into mixture, add rice, beat egg whites very stiff, fold into the rice mixture.

    Grease a water bath dish, line with crumbs. Pour rice mixture in, steam in water bath for about 60 minutes. Peel grapefruits thickly to remove all white pith, then filet the fruit.

    Let rice pudding steam off for a few minutes, pour it out and serve with grapefruit fillets.
