Rice Pudding

Ingredients
- 4 sheets of white gelatin
- 500 ml milk
- 2 tbsp sugar
- 150 g rice pudding grains
- 150 ml whipping cream
- 1 packet vanilla sugar
- 250 g apricots
- 70 g sugar
- juice of 1 orange

Soak gelatin in cold water. Boil milk with sugar. Sprinkle in rice pudding grains and stir. Bring to a boil, then simmer gently for 20-25 minutes, stirring occasionally. Cover and let stand for another 20 minutes until it sets.

Squeeze out excess water from gelatin and dissolve it into the hot rice pudding while stirring. Let the mixture cool. Whip cream until stiff peaks form, incorporating vanilla sugar. Rinse a pudding mold with water and pour in the cooled rice pudding. Refrigerate for 2-3 hours.

Score apricots crosswise. Briefly blanch them in boiling water for 1-2 minutes. Drain, shock in cold water, peel, halve, pit, and dice. Puree the apricots. Caramelize 50 g sugar until golden brown, deglaze with orange juice, and let the caramel reduce. Stir in the apricot puree and sweeten with remaining sugar.

Serve the rice pudding on a plate and pour the apricot sauce over it.
