Rice Patties

The rice patties from Spoonsparrow deliver a lot of energy and are the perfect side dish for fish, meat and more!

Ingredients

  • 700 ml vegetable broth
  • 350 g long-grain rice
  • 2 Spring Onions
  • 2 tbsp freshly chopped parsley
  • 2 Eggs
  • 50 g grated cheese (e.g. Parmesan)
  • Salt
  • Pepper (freshly ground)
  • cornstarch (as needed)
  • 3 tbsp cooking oil

Instructions

    Bring the broth to a boil and stir in the rice. Cover and let it simmer on low heat for about 20 minutes until absorbed.

    Wash, trim, and slice the white part of the spring onions into thin strips and cut the green parts into rings. Wash the parsley, shake dry, pluck the leaves and finely chop them.

    Let the cooked rice cool slightly while still open. Mix in the spring onions, parsley, eggs, and cheese. Season with salt and pepper. Let it cool completely. If the mixture is not yet moldable, add a little cornstarch.

    Shape small patties and fry them in a non-stick pan over hot oil for 5 to 6 minutes on each side until golden brown.

    Drain the rice patties on kitchen paper and serve with sweet‑sour sauce if desired.
