Ingredients

  • 700 g duck breast fillet
  • 1 tsp 5-spice mix
  • 5 tsp dark soy sauce
  • 10 Chinese rice pancakes (rice dough sheets)
  • 5 spring onions
  • 1 sesame oil
  • turmeric
  • 10 chives (long)

Instructions

    Season the skin side of the duck breast well with salt and refrigerate for about 8 hours. Then rub it with the spice mix. Preheat the oven to 200°C / grill function. Sear the duck breast in a pan on both sides for 5 minutes each, transfer to a baking dish and roast at the highest rack position for 10 minutes until crispy. Remove from the oven and let cool.

    Wash the spring onions and cut them lengthwise into long julienne strips; briefly sauté in sesame oil. Mix soy sauce and turmeric, dice the duck breast into small cubes, add to the pan and stir. Spread everything over the Chinese rice pancakes, roll up, tie with chives, and serve.
