Ingredients

  • 125 g shiitake mushrooms
  • 100 g rice noodles
  • 4 Spring Onions
  • 4 tbsp oil
  • 3 Garlic cloves
  • 1 red chili pepper
  • 50 g bamboo shoots (canned)
  • 2 tbsp white wine vinegar
  • 3 Tbsp oyster sauce
  • 1 tsp soy sauce
  • Salt
  • Pepper
  • 0.5 bunch coriander
  • 2 tbsp roasted peanuts

Instructions

    Clean and finely chop the mushrooms. Wash the spring onions and cut into small pieces. Wash the chili pepper and slice into rings, drain the bamboo shoots and cut into small pieces.

    Rinse the rice noodles according to package instructions with hot water and let them soak.

    Heat the oil lightly in a wok, peel and press the garlic cloves into the oil and sauté briefly. Add the chili and spring onions. Then add the mushrooms and bamboo shoots. Stir constantly and fry for about 5 minutes. Drain the noodles well and mix in. Whisk vinegar with oyster sauce, soy sauce, salt and pepper to make a sauce and pour it into the pan. Briefly stir everything together and season again with salt and pepper. Wash coriander leaves, shake dry and sprinkle over the peanuts.
