Ingredients
- 250 g round rice noodles
- 500 g pak choi
- 2 Garlic cloves
- 2 tbsp sesame oil
- 6 shallots
- 600 ml Poultry broth
- fish sauce
- 1 Lime (juice)
- lime wedge

Peel and finely chop the garlic and shallots. Wash the pak choi and spin dry. Cut the stems into thin strips and the leaves into wide ribbons. Heat the oil in a medium pot, sauté the garlic, shallots, and pak choi stems briefly, then pour in the broth. Simmer for 5 minutes, add the leaves, bring to a boil again, and season with fish sauce.

Meanwhile, soak the noodles in lukewarm water for 30 minutes. Drain and cook them in plenty of water according to package instructions. Drain and mix with the pak choi. Plate, drizzle lime juice over, garnish with a lime slice, and serve immediately.
