Rice Gratin with Pumpkin

Ingredients

  • 600 g pumpkin flesh
  • 1 small onion
  • 2 tbsp clarified butter
  • 100 ml Vegetable broth
  • 150 g cream cheese
  • 2 Eggs
  • 100 g Gouda
  • 300 g cooked basmati rice
  • Salt
  • Pepper

Instructions

    Preheat the oven to 200°C.

    Wash and grate the pumpkin flesh. Peel and dice the onion. Sauté both in clarified butter, pour in the broth and cook for about 7 minutes. Set aside, let cool slightly, then mix in the cream cheese. Add the eggs together with the cheese and rice, stirring well. Divide everything into four ramekins and bake in the oven for about 20 minutes. If needed, cover with foil to prevent over-darkening.

    Remove from the oven, plate on dishes, and serve.
