Ingredients
- 0.125 l milk
- 0.125 l heavy cream
- 1 Vanilla bean
- 125 g short-grain rice
- 3 tbsp maple syrup
- 1 egg yolk
- 150 g plum (or prune)
- 150 g grapes
- Basil
- cinnamon (for sprinkling)
Instructions

Slice the vanilla bean open and simmer its seeds with milk and cream in a pot. Stir in the rice, add 1 tbsp maple syrup, cover, and let it simmer over low heat for 1 hour.

Whisk the egg yolk, fold it into the cooled rice mixture, and allow to cool further.

Halve and pit the plums. Wash, halve, seed the grapes, then briefly boil them with the remaining maple syrup and 2 tbsp water in a pot. Remove from heat and let cool.

Take the cooled rice mixture, scoop it with 2 tablespoons onto plates, arrange around the compote, garnish with basil, and sprinkle cinnamon on top.
