Rice Cream with Berries

Ingredients
- 150 g round grain rice
- 300 water
- 4 sheets white gelatin
- 2 tbsp pear syrup
- 200 g whipping cream
- 500 g strawberries
- 100 g raspberries

Bring water to a boil, add rice, bring to a boil once more, then simmer on low heat for 20 minutes until softened. Soak gelatin in cold water, squeeze out excess and mix into the rice.

Sweeten with pear syrup and let cool. Whip cream stiffly. Wash berries, pat dry, set aside some strawberries and raspberries for garnish, finely chop the rest and fold into the rice with the whipped cream.

Fill rice into ramekins and chill in the refrigerator for 2 hours until firm. For serving, pour onto a plate and garnish with remaining berries.
