Ingredients

  • 400 g chicken breast fillet
  • 2 tbsp flour
  • 400 g red rice
  • 1 l chicken broth
  • 200 ml white wine
  • 1.5 tbsp basil pesto (from jar)
  • 1 yellow bell pepper
  • 1 small zucchini
  • Salt
  • pepper (ground)
  • olive oil
  • 1 tbsp pine nuts
  • 2 garlic cloves (finely chopped)
  • 1 onion (finely chopped)
  • fresh basil

Instructions

    Wash, pat dry and slice chicken breast into wide strips. Season with salt and pepper, coat in flour, set aside.

    Wash, core, halve, deseed, remove white membrane from bell pepper and dice. Dice zucchini similarly.
