Rice Broccoli Gratin

Ingredients
- 300 g basmati rice
- 600 ml Vegetable Broth
- Salt
- 500 g broccoli
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- Pepper
- 1 tsp lemon juice
- 3 eggs
- 50 g crème fraîche
- 60 g parmesan (block)
- 40 g whole grain breadcrumbs

Add the rice with the broth and a pinch of salt to a pot and bring to a boil. Cover and simmer for about 20 minutes until cooked. Remove from heat and let cool uncovered.

Wash the broccoli and cut into small florets. Peel and finely chop the shallot and garlic. Heat oil in a pan and sauté the broccoli with the shallot and garlic. Season with salt, pepper and deglaze with lemon juice. Cover and steam for 2-3 minutes. Separate the eggs and grate the parmesan. Mix the egg yolks with 2 tbsp of parmesan and the crème fraîche into the rice. Fold in the broccoli and beaten egg whites, seasoning with salt and pepper. Transfer to a greased baking dish if needed. Combine the remaining parmesan with the breadcrumbs and sprinkle over the rice. Bake in a preheated oven at 200 °C (180 °C fan) for about 35 minutes until golden brown.
