Spicy Rice Casserole

Ingredients

  • 200 g Long grain rice
  • 2 tbsp plant oil
  • 400 ml meat broth
  • 1 small onion
  • 1 bay leaf
  • 1 clove of nutmeg?
  • 200 g cooked ham
  • 250 g small zucchini
  • 1 tsp chopped thyme
  • nutmeg
  • black pepper (ground)
  • Salt
  • 100 g grated Gouda cheese
  • 3 eggs
  • 200 ml whipping cream
  • fat (for the dish)

Instructions

    Bring broth to a boil. Add onion with nutmeg, bay leaf and rice; simmer for about 20 minutes until rice is cooked. Remove onion.

    Wash zucchini and cut into fine strips. Cut ham into fine strips. Heat oil in a pan, add zucchini strips, season with thyme, nutmeg, pepper and salt, and sauté for 5 minutes.

    Combine rice, ham strips and zucchini.

    Preheat oven to 150°C. Grease a baking dish.

    Mix eggs, cheese and cream; fold into the rice mixture. Pour into the baking dish and bake for 15 minutes until golden.
