Ingredients

  • 250 g elderberries
  • 10 g salt
  • 10 g ginger
  • 60 g sugar
  • 1 Shallot
  • 2 Garlic cloves
  • 2 tbsp honey
  • 1 untreated lime (zest)
  • 80 ml white balsamic vinegar
  • chili flakes
  • 4 slices ribeye steak (about 200 g each)
  • Salt
  • Pepper
  • 2 tbsp Rapeseed oil

Instructions

    Wash the elderberries for the chutney and mix with salt and sugar. Cover and let sit overnight, or at least 2 hours.

    Peel and finely dice the ginger, shallot, and garlic cloves. Whisk honey in a pan until foamy. Add the diced shallot, garlic, and ginger; sauté briefly. Slice lime zest into fine strips and add. Briefly brown and deglaze with vinegar. Reduce slightly. Then add elderberries. Season with chili flakes, salt, and sugar. Let the chutney cool to lukewarm.

    Preheat the oven to 100°C fan.

    Wash the steak, pat dry, season with salt and pepper, then sear in hot oil for 4–8 minutes on each side depending on desired doneness. Wrap in foil and rest in the oven for about 10 minutes. Remove from oven and plate with chutney. Serve with a green salad and white bread.
