Bean-Paprika Beef Stir-Fry

Ingredients
- 250 g beef fillet
- 150 g canned red beans
- 100 g canned black beans
- 1 bunch spring onions
- 2 red bell peppers
- 1 onion
- 1 Garlic clove
- 1 hazelnut-sized piece ginger
- 3 tbsp oil
- 1 tsp crushed dried chili
- 200 ml instant meat broth
- Salt
- ground pepper

Slice the beef fillet into thin strips. Rinse the beans in a colander, cool under running water and drain. Trim and finely chop the spring onions. Quarter the bell peppers, remove seeds, and cut into strips.

Peel the onion and garlic. Slice the onion into wedges. Peel the ginger and dice very finely. Heat oil in a large non-stick pan. Brown the beef strips. Add onion wedges, ginger, and chili; sauté briefly. Squeeze in the garlic. Stir in the bell pepper strips. Pour in the broth and cover to simmer for 10 minutes.

Add the beans and spring onions, then heat through briefly. Season with salt and pepper. Cover again and let it cook on low heat for another 5-8 minutes.
