Ingredients

  • 500 g fresh rhubarb
  • 350 g strawberries
  • 1 vanilla pod
  • 75 g sugar
  • 250 ml apple juice
  • 150 ml orange juice
  • 1 vanilla pod
  • 1 tbsp Cornstarch

Instructions

    Wash the rhubarb, remove the fibers and cut into about 1 cm pieces. Wash, core, and quarter the strawberries.

    Slice the vanilla pod lengthwise and add it with the juices, sugar, and fruit to a pot. Bring to a boil, then simmer gently for 5-8 minutes until the rhubarb is tender. Remove the vanilla pod and puree with an immersion blender. Whisk the cornstarch with a little cold water, stir into the soup, bring to a boil, and thicken.
