Ingredients

  • 400 g rhubarb
  • 1 lemon
  • 300 g sugar
  • 600 ml sparkling water
  • 2 mint sprigs
  • 1 untreated lemon

Instructions

    Wash, trim, and cut the rhubarb into pieces. Juice the lemon.

    Boil the sugar with 150 ml water and simmer for about 5 minutes. Add the rhubarb and lemon juice to the syrup and cook for approximately 10 minutes until the rhubarb is tender.

    Cool the mixture and strain it through a cloth-lined sieve, pressing to extract all liquid. Allow it to cool completely. Fill bottles with the cooled syrup and top up with sparkling water. Garnish with mint leaves and lemon slices before serving.
