Rhubarb Crumble

Ingredients
- 400 g rhubarb
- 1 tbsp honey
- 1 tbsp Lemon Juice
- 200 g spelt whole‑grain flour
- 50 g whole‑grain sugar
- 100 g softened butter

Wash, trim, and cut the rhubarb into small pieces. Mix with lemon juice and honey and distribute in four ovenproof ramekins.

Combine spelt flour, whole‑grain sugar, and butter; rub between your palms until crumbly. Sprinkle over the rhubarb.

Bake the rhubarb crumble in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 20 minutes until golden brown. Remove from the oven and serve warm.
