Red Lentil Curry

Ingredients

  • 3 shallots
  • 2 Garlic cloves
  • 5 g Ginger
  • 2 carrots
  • 2 tbsp ghee (or butter)
  • 400 g red lentils
  • 1 tsp curry powder
  • 0.5 tsp turmeric
  • 1 pinch cinnamon
  • 0.25 tsp chili powder
  • 400 ml Vegetable broth
  • 200 ml coconut milk
  • salt to taste
  • 1 Mango
  • pepper from grinder
  • 2 tbsp freshly chopped coriander

Instructions

    Peel and finely dice the shallots, garlic, and ginger. Sauté in hot ghee for 1–2 minutes. Add lentils, curry powder, turmeric, cinnamon, and chili; deglaze with broth. Stir in coconut milk, season with salt, and simmer gently for about 10 minutes.

    While the curry simmers, peel the mango, remove the flesh from the pit, and cube it. Fold the mango into the curry and let it cook for an additional ~3 minutes. Season with salt and pepper, fold in coriander, and serve in small bowls.
