Ingredients
- 500 g beef (from shoulder, rib or shank)
- Salt
- paprika powder
- black pepper (freshly ground)
- clarified butter (for searing)
- 4 onions
- 200 g mushrooms
- 100 ml red wine
- 200 ml hot meat broth
- 2 Bay leaves

Heat a bit of clarified butter in a braising pot.

Divide the beef into 4-6 even pieces, season all sides generously, and brown them well on all sides in the hot fat.

Meanwhile peel the onions, cut them into wedges, add to the pot and let them soften slightly.

Slice the mushrooms and sauté them briefly as well.

Once everything has a good color, deglaze with red wine, pour in some meat broth, and simmer. Add the bay leaves and cook the beef for 45-60 minutes over medium heat, adding more broth if needed.

Taste the braising liquid at the end of cooking and plate the beef with onions and mushrooms.
