Ingredients

  • 2 red onions
  • 800 g red cabbage
  • 1 Tbsp clarified butter
  • 1 tsp cumin (cumin seeds)
  • 1 tsp sugar
  • 75 ml wine vinegar
  • Salt
  • ground pepper

Instructions

    Peel the onions and cut them into thin strips. Trim the cabbage, remove the tough core, quarter it, and shred the pieces into fine ribbons.

    Add the clarified butter to a large hot pot and sauté the onions until translucent.

    Briefly brown the cumin, then add the cabbage, sprinkle with sugar, and lightly caramelize.

    Deglaze with vinegar and a splash of water. Season with salt and pepper, cover, and simmer for about 20 minutes.

    Taste before serving and garnish with additional cumin if desired.
