Fried Vegetable Balls

Ingredients

  • 1 tbsp finely chopped shallots
  • 1 tbsp butter
  • 250 g young peas (frozen)
  • 100 ml Vegetable broth
  • 50 g Heavy cream
  • 1 Spring onion
  • 0.5 bunch Parsley
  • 100 g feta cheese
  • 150 g cooked potatoes from the day before (2 boiled potatoes)
  • 2 Eggs
  • Salt
  • black pepper (freshly ground)
  • nutmeg
  • flour (as needed)
  • breadcrumbs (for coating)
  • oil (for frying)

Instructions

    Sauté the shallots in butter until translucent, add the peas and cook briefly. Pour in broth and cream, simmer uncovered for about 5 minutes until softened. Blend with a hand blender and strain through a sieve if desired.

    Trim and finely chop the spring onions. Wash, dry, and finely chop the parsley. Dice the feta into small cubes. Peel and grate the potatoes. Combine all ingredients with the eggs and pea mixture, season with salt, pepper, and nutmeg. Shape small balls from the dough using lightly dampened hands (add a little flour if the dough is too soft), coat in breadcrumbs, and fry in hot oil until golden brown. Drain on kitchen paper and serve hot.
