Red Cabbage Stew with Pork

Ingredients

  • 500 g pork (e.g., shoulder)
  • 400 g red cabbage
  • 2 parsley roots
  • 2 carrots
  • 150 g celery root
  • 150 g waxy potatoes
  • 1 apple
  • 1 onion
  • 2 tbsp Vegetable oil
  • Salt
  • ground pepper
  • 1 bay leaf
  • ground caraway seeds
  • 500 ml meat broth
  • 2 tbsp freshly chopped parsley

Instructions

    Rinse the pork, pat dry, and cut into cubes. Wash, trim, and slice the cabbage into strips. Peel the parsley roots, carrots, celery root, potatoes, and apple. Core the apple and dice it with the vegetables.

    Peel and finely dice the onion. Sauté briefly in hot oil. Add the pork and brown on all sides.

    Add all the vegetables and the apple, sauté briefly, season with salt, pepper, bay leaf, and caraway seeds, then deglaze with broth. Cover and simmer gently for about 40 minutes, adding more broth if needed. Stir occasionally, add parsley at the end, and adjust seasoning.
