Red Cabbage Salad with Walnuts and Apples

The red cabbage salad with walnuts and apples from Spoonsparrow is always well received.
Ingredients
- 600 g red cabbage
- 5 tbsp red wine vinegar
- 1 tbsp apple juice
- 1 tbsp Olive Oil
- 2 tbsp liquid honey
- Salt
- Pepper
- 1 tsp allspice powder
- 1 tsp clove powder
- 1 tsp cinnamon powder
- 80 g hazelnut kernels
- 1 apple (e.g., Boskop)

Wash, trim, quarter the cabbage, cut out the core and slice it into strips. Place in a bowl, pour boiling water over it and let sit for 5 minutes. Then drain and let it drip dry.

Meanwhile whisk vinegar with juice, oil and honey to make a vinaigrette, add spices and season with salt and pepper. Roast nuts in a hot pan without fat until fragrant, remove, cool and roughly chop. Wash the apple, quarter it, core it and cut into 1 cm cubes.

Combine the vinaigrette, nuts, apple cubes and cabbage, season with salt and pepper and let rest for another 10 minutes. Divide onto four plates and serve.
