Red Cabbage Salad with Apples and Walnuts

Ingredients
- 800 g shredded red cabbage
- 2 Apples
- 2 tbsp lemon juice
- Salt
- 4 tbsp apple cider vinegar
- 1 tsp Honey
- 4 tbsp olive oil
- Pepper
- 2 tbsp walnut kernels (15 g each)
- 1 small box of watercress

Clean and wash the cabbage and apples. Shred the cabbage into fine strips, slice the apples into thin slivers. Drizzle the apple slices with 1 tbsp lemon juice. Massage the cabbage with a pinch of salt and the remaining lemon juice by hand until well mixed; let it rest for about 10 minutes.

Whisk together the apple cider vinegar and honey for the dressing. Gradually whisk in the olive oil, seasoning with salt and pepper to taste.

Arrange the cabbage and apples on plates. Drizzle with the dressing and sprinkle with pepper. Roughly chop the walnuts and cut fresh watercress from the garden; scatter both over the salad.
