Ingredients
- 500 g mixed berries
- 400 ml black currant juice
- 1 piece untreated lemon zest
- 5 tbsp sugar
- Lemon juice
- 2 tsp cornstarch
- mint
Instructions

Wash the berries, pat dry, and strip currants from their stems. Boil half with currant juice and lemon zest for 5 minutes.

Strain the berry liquid through a sieve. Whisk the cornstarch with ½ cup water until smooth, reheat the berry soup, and stir in the cornstarch mixture.

Add the remaining berries and simmer for another 3 minutes. Season with sugar and lemon juice. Serve garnished with mint.
