Red Bean Stew

The Red Bean Stew from Spoonsparrow is filling and joyful. And on top of that the recipe is super healthy!

Ingredients

  • 2 green bell peppers
  • 2 red onions
  • 500 g Potatoes
  • 2 tbsp butter
  • 1 Garlic clove
  • Salt
  • black pepper (freshly ground)
  • 4 tbsp tomato paste
  • 250 ml vegetable broth
  • 425 g red beans (1 small can)
  • 400 g Tomatoes
  • 250 ml tomato juice
  • paprika powder
  • 1 pinch cayenne pepper
  • 1 pinch sugar
  • 2 tbsp chives rings

Instructions

    Wash, clean, halve, seed and remove all white membranes from the bell peppers, then dice them into small cubes. Peel and finely dice the onions. Peel the potatoes and also dice them into small cubes. Peel the garlic.

    Sauté the onions in hot butter, press in the garlic, add the bell peppers and potatoes, stir in the tomato paste and pour in the broth, season with salt and pepper, cover and cook for 15 minutes.

    Drain the beans on a sieve, rinse with water. Briefly blanch the tomatoes, peel and quarter them. Add the tomatoes, tomato juice and beans to the vegetables. Bring to a boil, taste and serve sprinkled with chives rings.
