Raznici
A fresh meat dish featuring pork loin and lean veal cut into bite-sized cubes, marinated with onions, garlic, olive oil, and paprika before grilling on skewers.
Ingredients
- 350 g pork loin
- 350 g lean veal (shank or round)
- 1 onion
- 100 ml olive oil
- 1 Garlic clove
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- Salt
- Pepper (freshly ground)

Pat the meat dry with paper towels and cut into goulash-sized cubes. Peel the onion and slice thinly. Combine meat cubes, onion slices, and olive oil in a bowl. Peel the garlic clove and press it in; mix everything well, cover, and refrigerate for 2–3 hours to marinate. Wash the peppers, halve them, remove seeds, and cut into 2 cm pieces. Quarter the remaining onion, split each quarter crosswise, and separate the layers. Remove meat cubes from the marinade and let them drain slightly.

Oil the metal skewers. Alternate threading onion, meat, and pepper pieces onto the sticks.

Preheat a charcoal grill, or use an oven broiler if preferred. Brush the skewers all around with more marinade oil and place on the hot grates for about 15 minutes. Turn the skewers frequently, brushing again with oil each time. Season with salt and pepper and serve immediately.
