Ingredients
- 2 onions
- 300 g carrots
- 600 g veal (pre‑cut, from the loin)
- 2 tbsp plant oil
- 1.5 tbsp Ajvar
- 50 ml dry white wine
- 200 ml veal stock
- 100 ml heavy cream (at least 30% fat)
- Salt
- Pepper (freshly ground)
- Sweet Paprika Powder
- parsley (for garnish)

Peel the onions and carrots; slice the onion into thin rings and cut the carrots into narrow slices or julienne. Rinse the meat, pat dry, trim, and cut into bite‑size pieces. Heat oil in a pan and sear the meat in batches, turning as needed. Remove and set aside. Add the onions and carrots to the pan.

Sauté briefly, return the meat, stir in Ajvar, deglaze with wine, then add stock and cream. Season with salt, pepper, and paprika. Simmer over medium heat for 15–20 minutes. Taste, plate on preheated dishes, and garnish with parsley. Serve with potato‑pea mash if desired.
