Ravioli with Tomato-Mushroom Sauce

Ingredients
- 2 onions
- 1 Garlic clove
- 1 sprig rosemary
- 500 g mushrooms (e.g., button, chestnut)
- 4 tbsp olive oil
- 1 large can peeled tomatoes
- Salt
- freshly ground pepper
- a pinch sugar
- 500 g ready-made spinach ravioli (refrigerated or Italian specialty shop)
Instructions

Peel and dice onions and garlic. Rinse rosemary, shake dry, strip needles from stems. Clean mushrooms, trim, quarter or halve according to size.

Heat 2 tbsp olive oil in a deep pan or pot. Sauté onions, garlic, and rosemary. Add tomatoes, stir, and reduce to a thick sauce while crushing the tomatoes.

Heat remaining olive oil in another pan. Quickly brown mushrooms. Season with salt and pepper. Combine with tomato sauce, mix, and let simmer for a few minutes. Adjust seasoning with salt, pepper, and sugar.

Cook ravioli in plenty of salted water according to package instructions until al dente. Drain and set aside. Plate together with the tomato-mushroom sauce.
