Ravioli with Meat Sauce

Ingredients
- 300 g flour
- 2 Eggs
- 4 egg yolks
- 1 pinch salt
- water (as needed)
- 60 g finely chopped onions
- 50 g finely chopped carrots
- 50 g finely chopped celery sticks
- 1 Garlic clove
- 30 g Butter
- 1.5 tbsp olive oil
- 250 g roast beef (very finely diced)
- 4 tbsp red wine
- Salt
- Pepper (freshly ground)
- 300 ml passata tomatoes
- 1 tbsp chopped parsley
- 1 tbsp finely chopped oregano
- 1 egg
- 1 egg white (for brushing)

Prepare a pasta dough from the listed ingredients and let it rest in plastic wrap for 1 hour in the refrigerator.

Heat butter and oil in a pan, sauté the vegetables, add roast beef and brown. Deglaze with red wine. Take out 200 g of the mixture, blend finely, cool, mix in 1 tsp herbs and the egg. Add the passata tomatoes to the remaining meat in the pan and simmer gently for 15 minutes. Add the remaining herbs and season.

Roll the dough thin on a floured surface. Cut 5x8 cm squares with a smooth cutter, place some filling on one half, brush edges with egg white, fold, press edges, let dry slightly. Cook the filled pasta in simmering salted water for 6-8 minutes until they rise to the surface. Drain well. Serve on plates with sauce and garnish with oregano.
