Rauke Salad with Artichokes and Tomatoes

Ingredients

  • 1 can (425ml) artichoke hearts
  • 100 g green pickled garlic olives
  • 250 g Cherry Tomatoes
  • 200 g kale
  • 5 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • Salt
  • ground pepper
  • a pinch of sugar
  • 50 g Parmesan

Instructions

    Drain the artichokes and olives. Clean, wash, and halve the tomatoes.

    Rinse, clean, and wash the kale. Drain well.

  3. 3.

    Whisk together olive oil and vinegar. Season with salt, pepper, and sugar.

    Combine salad ingredients with the vinaigrette and arrange on plates. Grate fresh cheese over the salad.
