Raspberry Skyr Ice on a Stick
The Raspberry Skyr Ice on a Stick from Spoonsparrow is the perfect clean‑eating refreshment for summer.
Ingredients
- 250 g red raspberries
- 1 organic lemon (zest)
- 3 tbsp maple syrup
- 200 g Skyr
- 100 g Greek yogurt
- 100 g whipping cream
Instructions

Pull raspberries from their stems, wash them, and blend with lemon zest and 2 tbsp maple syrup until smooth. Strain the puree through a fine sieve into a bowl.

Whisk Skyr with yogurt in another bowl. Add one‑third of this mixture to the raspberry puree and stir.

Fold the remaining maple syrup into the rest of the Skyr‑yogurt mixture. Whip cream stiff, then fold half into each of the two mixtures gently.

Fill the mixtures alternately into six ice molds, lightly stirring with a spoon. Freeze for about 1 hour. Insert wooden sticks and continue freezing for another 3 hours.

Serve by removing the ice from the molds and placing on a chilled slate plate as desired.
